I started making these energy balls for a couple years now and they are my absolute favourite! I made the mistake of offering my boyfriend to try these and ever since, he likes to think I make them only for him, he loves them so much. 😉
If you find that the mixture is too dry, you can always add in a little more honey. If you use All Natural peanut butter, you likely store it in the fridge. I have found that the peanut butter can be too tough to work with if you use it immediately after removing from the fridge. I recommend removing the peanut butter from the fridge 5 minutes before you begin so the peanut butter can sit at room temperature.
The Best Peanut Butter Energy Balls
Ingredients
- 1 cup Quick Oats
- 1/4 cup Honey
- 1/2 cup Natural Peanut Butter I use Kraft Only Peanuts Smooth All Natural
- 1/4 cup Chocolate Chips, semi-sweet I use President's Choice Plant Based Semi-Sweet
- 1 pinch Sea Salt
- 1 tsp Vanilla Extract
- 1/4 cup Coconut unsweetened
- 2 tbsp Ground Flaxseed
Instructions
- Measure out all ingredients and put in a large bowl. Use a spatula and stir all ingredients well to fully combine.
- Place bowl in fridge for 20-30 mins so the mixture is easier to work with.
- Bring bowl out of the fridge and roll into balls about 1 table spoon (you can eyeball this).
- And that’s it. You can store the energy balls in an airtight container in the fridge.
